If you’ve never had larabars before, they’re delicious; they’re basically energy bars made only of fruits, nuts and spices. They also only have 4-5 ingredients which means they’re super easy to make at home! You just throw the ingredients in a food processor, and you’re done. Seriously, it’s that easy.
I made four different flavors and they all taste like dessert (except healthy!). The flavors I chose are peanut butter chocolate chip, blueberry muffin, coconut cream pie, and chocolate chip brownie! They’re all sweet, rich and super decadent. My favorite is peanut butter chocolate chip, but honestly, they’re all amazing.
Alright, let’s get into the video!
Ingredients
- Peanut Butter Chocolate Chip
- 1 cup unsalted peanuts
- 3/4 cup, packed (6 oz) dates
- 1/4 cup chocolate chips
- 1/4 tsp salt
- Blueberry Muffin
- 1 cup cashews
- 1/2 cup, packed (4 oz) dates
- 1/2 cup dried blueberries
- 1 Tbsp lemon juice
- Coconut Cream Pie
- 1/3 cup almonds
- 1/3 cup cashews
- 3/4 cup, packed (6 oz) dates
- 1/4 cup shredded, unsweetened coconut
- 1 Tbsp coconut oil
- Chocolate Chip Brownie
- 1/3 cup almonds
- 1/3 cup walnuts
- 3/4 cup, packed (6 oz) dates
- 1/3 cup chocolate chips
- 1/4 cup cocoa powder
- 1/4 tsp salt
Instructions
- 1. Add nuts to food processor and process until smooth. Then add rest of ingredients and process again until smooth and it holds together into a dough-like consistency.
- 2. Form the dough into a flat rectangle, wrap in plastic wrap, and refrigerate for about 30 minutes.
- 3. Cut into bars. Store in the refrigerator until ready to eat.
Notes
* If your dates are dry, make sure to soak them in hot water for about 10 minutes before you make the bars to ensure that the dough sticks together.
